Ingredients
2 1/2 cups self-raising flour
1/2 cup caster sugar
2 eggs, lightly beaten
2/3 cup vegetable oil
1 cup Vitasoy Greek Style Soy Yogurt – Hint of Strawberry
1/4 cup Vitasoy Oat or Soy Milk
1 1/2 cups mixed frozen berries

- Preheat oven to 200°C (180°C fan forced). Line 18 x 1/3 cup capacity muffin pan with paper cases.
- Combine flour and sugar in a large bowl. Combine eggs, oil, yogurt and milk in a separate jug. Add wet ingredients to the dry and stir until just combined. Fold in berries.
- Spoon batter into muffin cases and bake for 20 minutes or until golden brown and cooked through. Cool on a wire rack.
Add 1/4 cup dairy free chocolate chips for an indulgent treat.
