Vegan Mini Doughnut Recipe

These taste EXACTLY like a doughnut. They are crunchy, sweet and doughy with a beautiful cinnamon flavour.

Ingredients

Batter ingredients:

1 cup flour

2 teaspoons baking powder

pinch of salt

1/2 cup white sugar

1/4 cup plain oil

3/4 cup Vitasoy Soy Milky Lite

1 teaspoon vanilla extract

1/2 tablespoon apple cider vinegar

pinch of nutmeg

 

Ingredients for rolling:

Vegan margarine

cinnamon

sugar

Method

  1. Preheat oven to 180C and spray a 24 hole mini cupcake tray with oil.
  2. Beat all batter ingredients until smooth.
  3. Pour the batter into the mini cupcake tray.
  4. Bake for 8 to 10 minutes until lightly browned on top.
  5. While the muffins are still warm, lightly roll each one in melted margarine and then roll in a mixture of cinnamon and sugar (about 10 parts sugar to 1 part cinnamon). Set them aside.
  6. Best served immediately.
