

Ingredients
Lime Coconut Dressing:
1 cup Vitasoy Greek Style Soy Yogurt – Plain
Zest and juice of 1 lime
1 tablespoon desiccated coconut
Thai-Style Fish Cakes:
500g skinless white fish fillets, cubed
1 tablespoon finely chopped lemongrass
1 tablespoon finely grated ginger
2 teaspoons siracha sauce
1 tablespoon fish sauce
2 tablespoons chopped coriander leaves

- Combine yogurt, zest and lime juice and coconut and season to taste. Remove 2 tablespoons for fish cakes and set aside.
- Place fish, lemongrass, ginger, siracha, fish sauce, coriander and reserved 2 tablespoons of dressing in a food processor. Process until smooth and season with salt and pepper. Shape mixture into 12 patties.
- Heat a non-stick frying pan over medium heat. Add patties and cook for 3-5 minutes each side or until golden brown and cooked through. Remove from heat and serve with Lime and Coconut Dressing.
