Chicken with Herb and Seeded Mustard Sauce

4 small skinless chicken fillets

1 cups Vitasoy Soy Milky Lite

1 tablespoon cornflour

2 teaspoons dairy free spread

2 teaspoons seeded mustard

2 tablespoons fresh parsley, chopped

2 teaspoons fresh chives, finely chopped

2 teaspoons fresh tarragon, chopped

2 shakes/grinds pepper


  1. Heat griddle (or non-stick frypan) and spray chicken fillets lightly with olive oil spray.
  2. When griddle is hot, cook chicken fillets for 5 minutes on each side but only turn once.
  3. While cooking, blend cornflour into Vitasoy Soy Milky Lite in a saucepan and add dairy free spread.
  4. Heat mixture gently, stirring constantly until mixture thickens. Add seeded mustard, parsley, chives, tarragon and pepper.
  5. Pour sauce over char grilled chicken fillets and serve.
