Ingredients
1 teaspoon olive oil
1 clove garlic, crushed
2 spring onions, green section only
800g tinned diced tomatoes
1 tablespoon tomato paste
425g tinned tuna, drained
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
Pepper
200g gluten free lasagne sheets
1 cup Vitasoy Soy Milky Lite
1 tablespoons maize corn flour
3 teaspoons dairy free spread
75g grated reduced fat cheese

- Preheat oven to 180C, grease a rectangular oven proof dish
- Heat oil and gently fry garlic and sliced spring onion. Add tomatoes, tomato paste, tuna, thyme, parsley and pepper and simmer for 5 minutes.
- To make white sauce, place Vitasoy Soy Milky Lite, cornflour and dairy free spread in a glass jug. Whisk gently and then cook for 1 minute in microwave. Whisk and then cook for another 2 minute. Season and set aside.
- Place a layer of lasagne sheets on the base of greased tray. Spread over half the tuna mix. Cover with another layer of lasagne sheets. Spread remaining tuna mix and then top with another layer of lasagne sheets. Cover with white sauce, then sprinkle with tasty cheese and a few shakes of pepper.
- Cook for 30-40 minutes or until golden brown and allow to stand for 10 minutes before serving.
