Ingredients
Red Lentil Hummus:
1 cup dried red split lentils
1/2 small clove garlic, crushed
1 tablespoons lemon juice
2 tablespoons sesame seeds
1 x 140g tub (1/2 cup) Vitasoy Greek Style Soy Yogurt – Plain
2 teaspoons mixed white and black sesame seeds, to serve
Yogurt Flatbread:
1 cup self-raising flour
3/4 cup Vitasoy Plain Yogurt

- Cook lentils according to manufacturer’s instructions until tender. Drain well.
- Place cooked lentils, garlic, lemon juice, sesame seeds in a blender and process until smooth. Add the yogurt and process again until just combined. Adjust thickness with a little Vitasoy milk if required. Dip with thicken on standing.
- Serve topped with toasted sesame seeds and flatbread.
- Flatbread: Combine flour and yogurt in a bowl until mixture forms a soft dough. Turn onto a lightly floured surface and knead very lightly until smooth. Divide into 8 and roll out to form thin rounds approx. 12cm. Heat a char-grill pan over medium-high heat. Cook flatbreads, in batches, for 3 minutes either side, until golden brown and cooked through. Serve warm.
