Ingredients
2 sheets ready rolled lite puff pastry (160g), defrosted
1 cup Vitasoy Vanilla Soy Milky
2 tablespoons custard powder
1 1/2 tablespoons caster sugar
2 granny smith apples, cored and cut into quarters
100g fresh blueberries

- Preheat oven to 200C.
- Cut each pastry sheet into four quarters (squares). Gather up the edges, pinching together to make a wide shallow tart. Place on baking tray. Cook for 8 minutes or until just browned. Set aside.
- Cut apple quarters into 3mm wide pieces. Place in a microwave proof dish and cover with water.
- Cook in microwave for 2 minutes or until apple pieces have softened, but still hold their shape.
- In a small container, mix custard powder with 1/2 cup Vitasoy Soy Milky. Set aside. In a small saucepan over medium-high heat, add 1 cup of Vitasoy Soy Milky Vanilla and sugar. When almost boiling, stir in custard powder mixture and stir until well combined and the custard is very thick. Remove from heat and set aside.
- Into the pastry tart shell, place one quarter of the sliced apple pieces staggered along the base of the tart. Add a dollop of custard and bake in the oven for 2-4 minutes or until pastry shell is golden brown and custard is set on top. Remove from oven, sprinkle with blueberries. Allow to cool. Dust with icing sugar prior to serving.
