Vegan White Choc Mini Mudcakes

We love cupcakes! These are a more decadent version of our basic vanilla cupcakes with the addition of white chocolate in the cupcake, a white chocolate “buttercream” and home made vegan pink icing rosebud decorations! These are some seriously delicious treats. They are fluffy, moist mini white chocolate mudcakes!

Ingredients
  • Cupcake mixture:
  • 1 cup all-purpose flour, sifted
  • 2 teaspoons baking powder
  • pinch salt
  • ½ cup white sugar
  • 1/4 cup plain-flavoured oil
  • ¾ cup Soy Milky Lite
  • 1 teaspoon vanilla extract
  • ½ tablespoon apple cider vinegar
  • 100g vegan white chocolate, melted
  • White Chocolate "Buttercream" Icing:
  • 100g vegan margarine
  • 100g vegan white chocolate, melted
  • 200g icing sugar (confectioners sugar)
  • Other:
  • Rosebud decorations (optional)
Instructions
  1. Preheat oven to 180C and line 10 cupcake pans with liners or spray oil.
  2. In a large bowl, add the flour, baking powder, salt and sugar. Stir until combined. Add in the oil, soymilk, vanilla, apple cider vinegar and melted white chocolate. Beat for a couple of minutes or so until smooth without lumps.
  3. Divide the mixture between the 10 cupcake pans and bake for 25 to 30 minutes until risen and the tops of the cupcakes bounce back when touched.
  4. Take out of the oven and allow to cool completely. Set aside.
  5. In a bowl, add the margarine and icing sugar and beat for 30 seconds or so until combined.
  6. Pour in the melted white chocolate and beat until creamy and fluffy.
  7. Pipe the "buttercream" icing onto the cupcakes.
  8. Decorate with homemade rosebud icing decorations if desired (get the tutorial here)
  9. Serve immediately or store for up to three days. Enjoy!

Notes:
* To make the “buttercream” even more chocolatey, increase the white chocolate content.
