Vegan Mini Doughnut Recipe

These taste EXACTLY like a doughnut. They are crunchy, sweet and doughy with a beautiful cinnamon flavour.

Ingredients
  • Batter ingredients:
  • 1 cup flour
  • 2 teaspoons baking powder
  • pinch of salt
  • 1/2 cup white sugar
  • 1/4 cup plain oil
  • 3/4 cup Vitasoy Soy Milky Lite
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon apple cider vinegar
  • pinch of nutmeg
  • Ingredients for rolling:
  • vegan margarine
  • cinnamon
  • sugar
Instructions
  1. Preheat oven to 180 degrees celsius and spray a 24 hole mini cupcake tray with oil.
    Beat all 'batter' ingredients until smooth.
  2. Pour the batter into the mini cupcake tray.
    Bake for 8 to 10 minutes until lightly browned on top.
  3. While the muffins are still warm, lightly roll each one in melted margarine and then roll in a mixture of cinnamon and sugar (about 10 parts sugar to 1 part cinnamon). Set them aside.
    Best served immediately.
