Vegan chai rice pudding

Ingredients
  • 1/3 cup caster sugar
  • 3 cups Vitasoy Soy Milky Lite
  • 2 tsp vanilla extract
  • ¾ tsp ground cardamom
  • 3 tsp ground cinnamon
  • 1 tsp ground ginger powder
  • big pinch of ground cloves
  • ¾ cup short grain white rice
Instructions
  1. Place the sugar, Vitasoy Soy Milky Lite, spices, and vanilla in a large non-stick saucepan over medium-high heat and bring to the boil, stirring regularly. Add the rice. Reduce the heat to low and cook, gently simmering, for approximately 50 minutes or until the liquid has been absorbed and the rice is tender. Stir regularly as rice can stick to base of pan. Add extra Vitasoy Soy Milky Lite if required
  2. Serve the rice pudding warm or at room temperature.
