Vanilla and Orange Brulee

Ingredients
  • 2 1/4 cups Vitasoy Soy Milky Lite
  • 1 vanilla bean, seeds scooped from pod
  • 2 teaspoons vanilla extract
  • 3 egg yolks
  • 1 egg white
  • 1/4 cup caster sugar
  • zest of 1 orange
  • 1 tbsp brown sugar, for sprinkling
Instructions
  1. Lightly grease 4 x ½ cup ramekins.
  2. Place Vitasoy Soy Milky Lite, vanilla bean and vanilla extract into saucepan and heat gently. Turn off heat just before the Vitasoy soymilk boils. Do not allow to boil.
  3. In a mixing bowl, beat the egg yolks, white, and sugar with electric beaters on medium-high speed until light and creamy. Add the hot Vitasoy Soy Milky mixture to the eggs, stirring well. Add the orange zest and stir well. Chill for at least 30 minutes in the fridge.
  4. Remove from fridge, and pour into prepared ramekins. Place ramekinds in a water bath (large baking tray 1/2 filled with water), and cook for 30 minutes. Refrigerate for at least 4 hours (preferably overnight).
  5. To serve, sprinkle the top of each ramekin with brown sugar. Use a propane burner and sear the brown sugar for a crispy topping.
