Spicy Summer Soup

Ingredients
  • 2 avocados, pips removed
  • 400g of cooked prawns (shell removed)
  • 2 cups good quality chicken or vegetable stock
  • 2 cups Vitasoy Oat & Almond Milk
  • 1 cup of unsweetened regular yoghurt
  • 1 tsp fresh chilli, chopped finely
  • 2 tsp cumin powder
  • 2 tsp coriander powder
  • 1 tsp of honey
  • ΒΌ of a cup of fresh coriander, washed, stems removed, finely chopped
  • Sea salt and pepper to taste
Instructions
  1. In a food processor, add all of the ingredients, except the prawns, and blend
    until smooth.
  2. Pour mixture into a saucepan and heat to room temperature. Simmer on a low
    heat for approximately 5 minutes.
  3. Serve the soup in a bowl with the cooked prawns, a little coriander and
    yoghurt on the top.
