Smoked salmon and Rocket pasta

Ingredients

1 teaspoon olive oil

1 clove garlic, crushed

4 spring onions, green section only, sliced

1 1/2 teaspoon maize cornflour

2 cups Vitasoy Soy Milky Lite

80g rocket (or baby spinach leaves), washed and drained

100g smoked salmon, sliced

300g gluten free pasta

Method

  1. In a large saucepan filled with boiling water, cook pasta as per manufacturers directions. Drain and set aside, keeping warm.
  2. In a medium bowl, combine cornflour with a little Vitasoy Soy Milky Lite to form a paste. Add remaining Vitasoy Soy Milky and mix to combine well.
  3. Heat oil in frypan and add crushed garlic and sliced spring onion. Cook for 1 minute. Add Vitasoy Soy Milky Lite and gently simmer for 5 minutes. Add rocket (or spinach) and smoked salmon. Add cooked pasta and sauce through pasta gently to combine.
  4. Serve and garnish with shaved parmesan (or dairy free) cheese, if desired.
