Scrambled eggs with smoked salmon

Ingredients
  • 2 eggs, beaten
  • 3 Tbsp chopped fresh chives
  • ¼ cup Vitasoy Soy Milky Regular
  • 20g smoked salmon, cut into small strips
Instructions
  1. In a small bowl, lightly beat eggs, chives and Vitasoy Soy Milky Regular together until combined. Stir in smoked salmon pieces and mix gently to combine. Heat a small, 15cm non stick frypan over medium heat until hot then turn off the heat. Pour egg mixture into frypan. Gently move egg with spoon or spatula. Don't let egg settle. Remove from heat while egg is still slightly wet-looking. Serve with gluten free toast.
