Gluten Free Lemon Delicious

Ingredients
  • ¾ cup caster sugar
  • 60g softened dairy-free margarine
  • 4 eggs, separated
  • Rind of 1 lemon, finely grated
  • 1/3 cup lemon juice
  • ½ cup gluten free self-raising flour
  • 1 ½ cups Vitasoy Soy Milky Lite
  • Icing sugar for dusting
Instructions
  1. Preheat fan-forced oven to 170°C. Lightly grease a 1.5 litre ovenproof dish.
  2. Combine caster sugar, margarine, egg yolks and lemon rind in a bowl and beat with electric beaters on medium speed until creamy.
  3. Sift flour into mixture and add lemon juice and Vitasoy Soy Milky Light. Gently beat until combined. In a separate bowl, beat egg whites until soft peaks form and fold into lemon mixture.
  4. Pour mixture into a prepared dish. Stand dish a water bath (a larger baking dish, half filled with water) and bake for 45-50 minutes until set and lightly browned.
