These breakfast muffins are great to make the day before so you can grab one and get going in the morning!

Ingredients
  • 1 cup self-raising flour
  • 1 large banana
  • 1/2 cup rolled oats (plus more to sprinkle)
  • 2 tablespoons lemon juice
  • 1/2 cup nuts/seeds (we used chia seeds, flax seeds, almonds, pumpkin seeds)
  • 10 dates
  • 2 1/2 cups Vitasoy Almond Milk Unsweetened
  • 2 tablespoons nut butter
  • 1/4 cup maple syrup
  • big dash vanilla extract
  • 1/2 cup blueberries
